Spinach Pie
 

Imperial oz.
4 lb 6 oz. spinach
1 lb. 2 oz. Ricotta cheese
3 eggs
nutmeg
6 oz. Parmesan
1 glass extra virgin olive oil
salt & pepper

3/4 cup Parmesan

salt & pepper

2 kg. spinach
500 gr. Ricotta cheese
3 eggs
nutmeg
150 gr. Parmesan
1 glass extra virgin olive oil
salt & pepper

 

Wash and clean the spinach, boil in very little salted water for a short time, strain and eliminate as much water as possible, chop and place in the bowl of the mixer. Add all the other ingredients: whole eggs, Parmesan, nutmeg, olive oil and salt to taste. Blend until smooth.
Butter an oven dish and place the mixture inside levelling the surface well. Bake at 300°F/150°C/G2 for the time it takes to form a thin film on the surface.
